Chicken Kabobs (Served with Greek Salad and Rice Pilaf)


Ingredients:

• Fresh chicken
• Lemon juice
• Olive oil
• Seasoning (Blend of garlic, salt, pepper and oregano)
• Sliced red onion
• Sliced green bell pepper
• Sliced cherry tomatoes

Preparation:

Take one fresh chicken cut into 1" cubes and marinate in lemon juice and oil.

Season with a blend of garlic, salt, pepper and oregano.

Skewer alternately with red onion, green bell pepper and cherry tomatoes.

Grill until chicken's internal temperature reaches 165 degrees.


Greek Salad

Ingredients:

• Fresh chopped romaine, iceberg and baby greens
• Vinaigrette Dressing (Blend of olive oil, red wine vinegar and mix of salt, garlic, pepper and oregano)
• Sliced cucumbers
• Sliced cherry tomatoes
• Sliced red onion
• Crumbled feta cheese
• Sliced bell peppers
• Pitted Kalamata Olives
• Whole pepperoncini


Preparation:

Toss salad mix with vinaigrette dressing. Add cucumbers, cherry tomatoes, red onion, feta cheese, bell peppers, olives and pepperoncini. Pita bread served on the side.

Rice Pilaf

Ingredients:

• Brown rice
• Chopped onions
• Zero trans fat butter
• Black pepper
• Chicken stock
• Beef stock

Preparation:

Sauté chopped onions in zero trans fat butter. Season with black pepper. Add chicken and beef stock, bring to a boil. Cook rice until liquid is evaporated (about 30 minutes.) Stir and serve.
