Gnocchi Potato Dumplings

Ingredients:

  • 1 lb. potato
  • 1 whole egg
  • 3 oz. flour
  • salt
  • pepper
  • 2 oz. parmesan cheese
  • pinch nutmeg

To prepare the Potato Dumplings:


  1. In a separate pot boil the potatoes until cooked or bake in the oven at 350 for 45 minutes. 
  2. Peel the potatoes and pass them through a food mill. 
  3. Add the parmesan, egg, salt, pepper and nutmeg. 
  4. Mix well and then form into gnocchi. 
  5. Cook in salted boiling water.
  6. Serve with the ragu.
