Yuzu Soy Vinaigrette by Raku

Yuzu Soy Vinaigrette (Salad dressing)

2 pcs Minced Shallot

½ cup Mirin

 

(Sweet Sake-no alcohol) can be purchased at gourmet shop or Asian grocery store

 

 

 

 

 

 

cup Soy Sauce

 

2/3 cup Rice Vinegar

1 cup Canola Oil

¼ cup Yuzu Juice (Japanese Citrus)

 

 

 

 

 

 

May Substitute with Lemon or Lime juice

 

 

 

 

 

 

2 oz Brown Sugar

1 Tbs Salt

1 Tbs Black Pepper

 

Combine all of ingredients above and mix very well.

 

 

Lemon Basil Sauce (Tuna Tartare)

2 oz Basil

 

(Leaf only)

 

 

 

 

 

 

¼ cup Lemon Juice

¼ cup Mirin

 

(Sweet Sake-no alcohol) can be purchased at gourmet shop or Asian grocery store

 

 

 

 

 

 

¼ cup ` Rice Vinegar

1 pc Egg Yolk

2 tsp Salt

Pinch White Pepper

2 cup Canola Oil

 

Mix all ingredients except Canola Oil in Blender very well. (until no chunky basil leaf)

Then add canola oil slowly to emulsify

 

 

Soy Marinade (Tuna Tartare)

1.5 cup Mirin

 

(Sweet Sake-no alcohol) can be purchased at gourmet shop or Asian grocery store

 

 

 

 

 

 

1 cup Soy Sauce

¼ cup Sesame Oil

1 Tbs Ginger (minced)

1 Tbs Garlic (minced)

1 tsp Crushed Chili Flakes

 

Combine all ingredients in pot and bring to boil. Immediately, remove from heat and steep for 10 min.

Strain the soy marinade and keep it refrigerated until needed.
